dc.description.abstract To assess the health of the slaughterhouse in El Oued and the hygiene of slaughter processes, our study focused on the flora of surface contamination of carcasses camel bacterial and fungal. The flora is the predominant flora aerobic mesophilic total (1.79 log10 cfu/cm2, 57%) followed by enterobacteria (0.84 log10 cfu/cm2; 27%) and fecal coliform (0.50 log10 cfu / cm2, 16%). The contamination rates are significantly lower than those recorded on beef carcasses (2.76 log10 cfu / cm2 for flora aerobic mesophilic total; 2.16 log10 cfu / cm2 for Enterobacteriaceae and 1.66 log10 cfu / cm2 for fecal coliform), And sheep (3.08 log10 cfu / cm2 for flora aerobic mesophilic total, 2.90 log10 cfu / cm2 for Enterobacteriaceae and 2.72 log10 cfu / cm2 for fecal coliform). To study fungi, we have identified five molds (Penicillium sp 28 times or 41.18%; Cladosporium sp 20 times or 29.41%; Mucorales sp 11times or 16.18%; Aspergillus niger 5 times or 7.35% and Alternaria 4 times or 5.88%) and six yeast (Rhodotorula rubra 25 times or 44.64%, Rhodotorula glutInis 13 times or 23.21%, Geotrichum sp 11 times or 19.64%, Torulopsis sp 4 times or 7, 14%, Cryptococcus neoformans 2 times or 3.57%, and Cryptococcus sp 1 time or 1.79%)
