dc.description.abstract The study of this work is based on the revealing of the labelling and the traceability of food products, conversing in two parts. The one theoretical collecting deferential theoretical information concerning the labelling of food products by basing itself on regulations in force while quoting the information of necessary bases for the establishment of a label such as the naming of sale, the list of ingredients, the net quantity, the indication of date, the particular conditions of preservation, the person in charge " producing or importer ", the country of origin and / or origin, the instructions for use, the number of prize and the language of the label and also some mentions optional on the labelling of products imported according to the directives European as the signs and the logos quality officials, the code with bar, the nutrition labelling, the naming of whim, assertions " the quantitative nutritional assertions, the functional nutritional assertions, the assertions health and assertions concerning the mode of manufacturing .etc. As well as the global study of the traceability of devers links of the food chain while exposing the concepts let us define deferential standards: Iso 8402, regulation (CE) N° 178/2002 and the codex alimentarius, by determining the measures and the objectives of this operation basing itself on deferential information concerning the food product such as the manufacturing date, the number of prize and the code with bar, so the labelling squeezed considered as one requires for this operation. The second party to concern the study of the labelling of twenty foodstuffs exposed on the market, by basing itself on the direct observations disinformation’s found on the label and to see if it respect in the regulations in force, and the abnormalities observed, whose results turned out not satisfactory what testified of a carelessness of the application of the rule by the producers, by raising problems on the operation of follow-up of the traceability to reveal the real causes in case of a sanitary crisis. In this optics, it would be necessary imposed a severe and strict control over the labeling of food products especially prepackaged, and that for consumers be informed to choose the product, according to his desire and his health on one side and the possibility of tracing food for each of the other side.
